This implements the ability to serialize a MultiEraProtocolParameters object to a json format that matches that used by ogmios:
https://ogmios.dev/api/#operation-subscribe-/?QueryLedgerStateProtocolParameters
It also tries to document a bit how some of these are represented / interpreted.
