Add Zarr output format support and reduce_dims customization to scorecard evaluation.

Set Zarr latitude chunk size to 181 to prevent 1-row leftover chunks on regular lat-lon grids.

The pole-endpoint branch is off for the grids it cites. A 0.25-degree pole-inclusive grid has 721 latitudes; dropping +/-90 leaves 719, and coarsen(latitude=4, boundary='trim') produces 179 cells with first centre -89.375 degrees, not 180 cells centred at -89.5 degrees. This needs different alignment/regridding rather than simply removing both endpoints.
