Rename and hover

Two commits:

• rename symbol which required a larger refactor to make sense with two new files.
• add hover, which requires the previous commit. This one also fixes LSP_Hover struct for syntax highlighting and works around ast_print missing handlers for struct/enum/union/#type (those would otherwise render as literal uppercase "STRUCT", "DIRECTIVE_TYPE" etc.)
