refactor: By default, sample only simple characters in strings

Motivation

It is often annoying to get strings sampled from all unicode characters. With this change, you get easily readable strings. If you want more special characters, you can still provide your own regex.

• If no regex is provided, sample only from [0-9a-zA-Z]
