Refactor PlantUML diagrams for OETH and OUSD.

Description

This pull request updates the PlantUML diagrams for OETH and OUSD contract dependencies, primarily cleaning up and simplifying the visual representations by removing obsolete or unused contract components and their relationships.

OETH Diagram Updates:

• Removed commented-out definitions and relationships for OETHVaultValueChecker and ConvexEthMetaStrategy to reduce clutter and focus on active components. [1] [2] [3] [4]

OUSD Diagram Updates:

• Removed the Dripper, Harvester, Buyback, ConvexStrategy, Morpho Gauntlet Prime USDT Strategy, and Sky Saving Rate (SSR) Strategy objects, as well as their associated relationships, from the diagram. This reflects the current state of the contracts and keeps the diagram up to date. [1] [2] [3]
• Updated the Vault object to only include USDC as an asset, removing outdated assets.
• Cleaned up the oracle and strategy relationships to match the current contract architecture.
