Update HDF5 plugin version from 2.0.0 to 2.1.0 across configuration and documentation files.

• Version Updates:
  • Update H5PL_VERS_MINOR from "0" to "1" in CMakeLists.txt and CMakePresets.json.
  • Update CTEST_SOURCE_VERSION from "2.0.0" to "2.1.0" in HDF5PLconfig.cmake.
  • Update HDF5_ROOT paths to "2.1.0" in INSTALL_With_CMake.txt.
• Documentation:
  • Update example preset names and paths in INSTALL_With_CMake.txt to reflect version "2.1.0".
