This PR updates the following dependencies to use their main branches:

- `iroh` from `https://github.com/n0-computer/iroh.git`
- `quic-rpc` from `https://github.com/n0-computer/quic-rpc.git`
- `iroh-base` from `https://github.com/n0-computer/iroh.git`
