Simulation Interfaces backports are not reflected here

We seem to be stuck in v1.2.0 while the latest version of simulation interfaces for jazzy is currently at v1.5.1.

What is the way to update the rosdistro_snapshot.yaml with the latest version?

Apologies this would be my first time contributing here. Would you suggest I run the full rebuild locally and make a PR with the changes? Or is there a pipeline workflow that a maintainer needs to trigger?

I think it is probably easier to just do the modification for the full rebuild in a branch, and open a PR early on, so that you can exploit the continuous integration on the PR to easily test the changes on different platforms, while typically locally you can only test the changes for a platform or two. See #161 for the latest full rebuild PR, that by the way was also started by a new contributor (@lvjonok in that case).
